By law, Australian Food Businesses must employ someone who holds a Food Supervisor Certificate at each premise. Learn the basics in monitoring food safety and meet your legal requirements and protect your customers with a Food Safety Supervisor Certificate. QAT’s food safety supervisor course is for anyone who handles food (cooks, chefs, caterers, kitchen stewards, kitchen hands, and bar, food and beverage attendants) and applies to all tourism, hospitality and catering organisations with permanent or temporary kitchen premises or bar areas who want to learn the basic content of all fundamental food safety principles and protect customers and staff from potentially hazardous food.

BECOMING A SAFE FOOD SERVICE SUPERVISOR – FAQS

Is this an online course or is it a face-to-face food supervisor course?

QAT offers face-to-face food safety supervisor courses as opposed to an online training course. Our food safety supervisors course is conducted in-person because we believe in a hands-on learning approach, especially when it comes to the direct health and safety of yourself, your staff and the public.

What are some examples of basic food safety practices?

We will go over this in further detail when you attend QAT’s course for food safety supervisor certification, however some examples of food safety skills and food safety procedures include:

  • Implementing proper handwashing techniques to ensure you and your staff participate in the personal hygiene practices to handle food safely 
  • Ensuring food is stored at appropriate temperatures to prevent food contamination and bacterial growth
  • Regularly cleaning and sanitising food contact surfaces and equipment
  • Separating raw and cooked foods to prevent cross-contamination 
  • Using food thermometers to ensure foods are cooked to the correct temperature to prevent food borne illnesses 
  • Properly labelling and dating food items to track expiration dates
  • Training staff on basic food safety practices and procedures
  • Establishing an organisational food safety program and food safety monitoring processes to regularly assess and address potential hazards
  • Utilising food safety management tools such as HACCP (Hazard Analysis and Critical Control Points) to identify and control food hazards and maintain stern food safety standards
  • Ensure staff follow organisational hygiene procedures on your premises 
  • Identify food hazards and report unsafe practices which breach hygiene procedures promptly and rectify the issue at hand

What are some examples of personal hygienic practices for food safety?

We will go over this in further detail when you attend QAT’s course for food safety supervisor certification, however some examples of personal hygiene practices for food safety include:

  • Regularly wash hands with soap and warm water before handling food
  • Tie back hair and wear a clean hat or hair net to prevent hair from falling into food
  • Avoid touching face, hair, or body while preparing food
  • Wear and maintain clean clothes
  • Wear appropriate clothing, including a clean apron, while working with food
  • Cover any cuts or wounds with waterproof bandages and wearing disposable gloves when handling food
  • Avoid wearing jewellery, especially rings and bracelets, that can harbour bacteria
  • Practise good oral hygiene, including brushing teeth and using mouthwash, to prevent contamination from saliva
  • Report personal health issues likely to cause a hygiene risk
